  Gastronomy of Jimena de la Frontera

An internal land area in the region of Gibraltar, Jimena de la Frontera stands out for its varied cooking using native foodstuffs such as pork, kid goat, game, leafed and root vegetables, fruit and fine traditional Arab desserts.
Recipes include dishes such as pork trotters with vegetables and spices, using left-over parts of the pig. Others are made using lamb or kid. Using game they offer dishes such as venison, partridges and wild rabbits.
The oranges from the village orchards of San Martín del Tesorillo are extremely well known, these orchards representing the fruit producers of the area.
In terms of confectionary the wine dough cakes and Jimena candied nuts are specialities, prepared using flour, honey, almonds and other additives.

RECIPE

Candied Nuts of Jimena de la Frontera
Ingredients: 300 grams of flour; 1/2 glass of water; 1 egg; 1/2 litre of oil; 1 glass of grappa; 1 glass of brandy; sesame; a clove; honey; orange peel; almonds.
Make dough with the flour, water, egg, some oil, grappa and cognac mixing it until it appears fine. Leave it sit for a few hours.
In the meantime, fry the sesame, clove and orange peel in the oil, then remove and throw them away keeping the oil to fry the dough in small pieces. Once golden bathe them in honey and as you remove them sprinkle them with the chopped almonds.
